I tasted the vinegar today and I believe it is nearly ready. The flavors have certainly come together. Now when I taste it my face does not contort into funny shapes. It has a nose of oak and spice along with the brightness of vinegar. The taste is mildly sweet, obviously sharp, and well rounded. The color is golden, the yellow of hay if you could make it a clarified liquid, and there does not seem to be any cloudiness which tells me the mother has risen to the top symbolizing the completion of transformation. Perfect timing really as I am about to harvest quite a bit of Mexican tarragon from the garden.
