I picked my first three Anaheim peppers to early (a error in trying to avoid the birds and bugs from eating them). Thinking that I may have done this I set them in the kitchen window sill to finish ripening. They have since turned a brilliant red but have unfortunately (or very fortunately, however you want to look at it) started to wrinkle as the dry out. The thought did occur to me though to let them finish drying out and then turn them into a ground product resembling paprika. I guess we will see what happens soon. I have also thought of smoking the peppers while they dry. Maybe that will happen on the next batch.
